Steamed Artichokes with French Bread Pizza



French bread pizza topped with prosciutto, goat cheese, parmesan cheese, tomato, green pepper, red onion, fresh chopped parsley, a touch of honey and a bit of alfredo sauce. Baked at 350 until cheese it melted and bread is toasty.

Served with steamed artichoke and clarified butter.

Aimee makes Falafel!



I came home, and to my delight, my lovely wife had made some Falafel balls with a yummy dill sauce, fresh cut tomatoes, avocado, red pepper, lettuce and a spritz of lemon juice on garlic Naan bread.

Goat Cheese & Pistachio stuffed Grapes



An amazing little appetizer I made for my wife on Valentine's Day. Very simple, very elegant and very, very good. Just a grape cut open and stuffed with goat cheese then rolled in crushed pistachios.

Sweet & Spicy Peanut Butter Pistachio Chicken Sandwich

A tasty little ditty adapted from a recipe over at whatscooking.us

2 parts Peanut Butter, 1 part honey, 1 part Greek Yogurt, 2 chipotle peppers and a handfull of crushed Pistachios.

Covered the chicken breasts in the Peanut Butter mix a baked at 350 for about 40-45 minutes. Juicy and flavorful chicken on a Wheat Montana cornmeal bun.

Naan Bread Veggie Pizza



We made up some Naan Bread Veggie Pizza last night for dinner. We grabbed about every veggie we had in the fridge (Basil, Zucchini, Red onion, white onion, etc.) threw it on some Spinach Naan Bread (Amazing with a little butter and honey, too!) topped that with some thick cut mozzarella and baked until golden and gooey. A scrumptious and quick little dinner!

Ford's Drive-In, Great Falls, MT



It has been about a month since I had a burger and I've been meaning to try Ford's for quite a while. I was in Great Falls for the afternoon, so I figured now was the time to try Food Magazine's "Best Burger in Montana." I'm not sure I'd go that far, but it is a damn fine burger.





I tried the Chocolate shake. Quite nice.





The burger itself had a delicious, fresh flavor like a burger should. Reminds me of an RB Drive In burger from Helena, but without the relish and a higher quality meat at Ford's. Just off the second interstate exit, it's worth a stop if you headed to or through Great Falls.

A Vegetarian Eats



A looooooong stretch of nothing but meat and fried potatoes had left me feeling quite slow and tired, so I decided to start eating a bit healthier. Actually, a ton better. It has been one week meat free. Surviving last week on Naan bread pizza, Migas (from the Pioneer Woman Cookbook), Veggie Gyros, Veggie Burgers (From previous post) and veggie "No Sweat Cafe" menu items. I do have to say, I feel much better. Next up is diving into the 660 Curries cookbook.
