I picked up a gallon of nacho cheese on my last trip out to Costco and then realized I had a gallon of nacho cheese to use, so I looked up some recipes involving nacho cheese. Beyond nachos, dip and tacos there wasn't much out there. I discovered one recipe that was just a can of chili, some nacho cheese and some chips. I added some shredded chicken, carrots, caramelized onion and corn along with some chili, chips, cheddar cheese and a fair helping of nacho cheese. Served with a bit of Chipotle Tabasco sauce on top. Very rich and very hearty. I wouldn't eat too much, though.
