Coconut Chicken Masala that Aimee adapted from a Jamie Oliver cookbook. Chicken, coconut mile, lots of onion, tomato and some other veggies I don't remember.
Paired with a some cilantro and lime rice. I whipped up a cucumber/honey/dill yogurt sauce to go on top. A fantastic and incredibly easy recipe. Took about 30 minutes to 40 minutes to complete. (And healthy!)
